Ingredients

 

170g unsalted butter, cut into blocks

30ml (2 Tbsp) honey

75g white sugar

75g soft brown sugar

375ml (1 ½ cups) oats

310ml (1 ¼ cup) cake flour

80ml (1/3 cup) almonds or mixed nuts, chopped

250ml (1 cup) desiccated coconut

5ml (1 tsp) cinnamon

5ml (1 tsp) nutmeg

5ml (1 tsp) baking soda

5ml (1 tsp) salt

 

Method

Preheat the oven to 180°C. Line a baking tray with baking paper and spray with non-stick food spray.

Combine the butter, honey, and both sugars in a small saucepan. Melt on a low-medium heat until the sugar is dissolved.

In a large mixing bowl, combine the oats, flour, nuts, coconut, spices, baking soda, and salt. Mix well and combine the dry mixture with the sugar mixture, then mix until well combined.

Press the mixture into your baking tray to the thickness of your liking. Bake for about 20-25 minutes until golden brown. Remove from the oven and allow cooling on the work surface for about 2-3 minutes. Remove the crunchies and cut them into squares while still warm. Place on a cooling rack and allow to cool.
